Peanut Butter Oatmeal Energy Bites (Gluten-Free + Dairy-Free)

Earlier today I was searching all over the kitchen trying to find something to calm my hungry stomach (It is like I am always hungry, I think it might have to do with my gluten-free diet), but I found nothing quick. So I went on Pinterest and found this delicious recipe! 

 

 I gathered the ingredients and started mixing them up. All it is, is oatmeal, peanut butter, coconut, honey and chocolate chips! You can’t tell me that’s not simple.  I gotta admit I didn’t know how this would taste. I was pretty excited when I found organic chocolate chips. They tasted just like normal chocolate chips!

Peanut Butter Oatmeal Energy Bites

These oatmeal bites are the delicious, perfect, and healthy snack. Gluten and dairy free!

Ingredients
  1. 1 cup oats
  2. ⅔ cup toasted shredded coconut
  3. ½ cup peanut butter
  4. ½ cup chocolate chips
  5. ⅓ cup honey
Instructions
  1. Combine all ingredients in a large bowl.
  2. Roll and compress the mixture into 1 inch rounds and place on parchment paper
  3. Refrigerate a few minutes until firm and then transfer to an air tight container.
  4. Refrigerate and enjoy for up to one week.
Notes
  1. The original recipe called for vanilla and chia seeds. I did not have either so I did not put them in. They turned out delicious!
