Earlier today I was searching all over the kitchen trying to find something to calm my hungry stomach (It is like I am always hungry, I think it might have to do with my gluten-free diet), but I found nothing quick. So I went on Pinterest and found this delicious recipe!
I gathered the ingredients and started mixing them up. All it is, is oatmeal, peanut butter, coconut, honey and chocolate chips! You can’t tell me that’s not simple. I gotta admit I didn’t know how this would taste. I was pretty excited when I found organic chocolate chips. They tasted just like normal chocolate chips!

Ingredients
- 1 cup oats
- ⅔ cup toasted shredded coconut
- ½ cup peanut butter
- ½ cup chocolate chips
- ⅓ cup honey
Instructions
- Combine all ingredients in a large bowl.
- Roll and compress the mixture into 1 inch rounds and place on parchment paper
- Refrigerate a few minutes until firm and then transfer to an air tight container.
- Refrigerate and enjoy for up to one week.
Notes
- The original recipe called for vanilla and chia seeds. I did not have either so I did not put them in. They turned out delicious!
